Summer Tommes with their characteristic musty, grey rind have a much sweeter and nuttier taste profile than spring Tommes. Made by using both morning and afternoon milk and adding skimmed milk to the more typical full fat milk, gives a lower fat content compared to other high Alpine cheeses. The creamy pitted pate develops during maturation, giving a rustic Alpine taste of grass and nuts, with a slight tangy citrus undertone developing on the palate.
